Pasta, pieces of fried chicken, fresh spinach, and sweet grape tomatoes fall in love in this delicious, light pasta dish that's sure to make you fall in love too. The dish is bright and juicy, and the finely shaved Parmesan cheese adds a special flavor. Ree Drummond recommends shaving the Parmesan with a vegetable peeler rather than grating it, so you can better appreciate every salty bite.

Ingredients:

  • 450 g penne pasta
  • 4 whole boneless, skinless chicken breasts, cut into small pieces
  • 2 tablespoons butter
  • 2 tbsp. l. olive oil
  • 4 cloves garlic, crushed
  • 3/4 cup lightly salted broth, add more if needed
  • 3/4 cup dry white wine
  • 1 package of baby spinach
  • 2 cups grape tomatoes, halved lengthwise
  • 100g Parmesan, grated with a vegetable peeler, plus extra for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cook the pasta in lightly salted water according to package directions. Drain and set aside.
  • Step 2
  • Season the chicken with salt and pepper. Heat the butter and olive oil in a large skillet over high heat. Add the chicken pieces in a single layer and cook, undisturbed, for a few minutes until browned. Flip the chicken over and cook the other side. Cook until cooked through, then remove the chicken from the pan.
  • Step 3
  • Reduce the heat to medium. Add the garlic and stir quickly to prevent burning. After about 30 seconds, pour in the broth and wine, stirring and scraping the bottom with a wooden spoon. Bring the liquid to a boil, then continue cooking until it has reduced by at least half (at this point, most of the surface of the liquid should be bubbling).
  • Step 4
  • Turn off the heat. Add the spinach, tomatoes, chicken, cooked pasta, and Parmesan shavings to the pan. Stir. The spinach will wilt as you stir. Add more Parmesan shavings and serve immediately.
