Florentine-style dishes feature the addition of poached spinach, as in this recipe for crispy chicken breast topped with melting mozzarella and served with a quick sauté of cherry tomatoes and spinach. This recipe takes less than half an hour to make and looks like it could be ordered from a fine restaurant—perfect for both a weekday dinner and a holiday menu. For the crispiest possible crust, bake the chicken in coarse, airy panko breadcrumbs and serve immediately, before the crust gets soggy from the melting cheese and vegetable juices.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1.5 cups of flour
  • 1/4 cup milk
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 5 tablespoons of butter
  • 5 tbsp. l. olive oil
  • 220 g mozzarella, thinly sliced
  • 2 cups red and yellow cherry tomatoes
  • 6 cups fresh baby spinach
  • 3 cloves garlic, crushed
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • Set up a breading area by placing three bowls side by side. In one, mix flour with salt and black pepper. In another, beat eggs with milk, and in a third, mix breadcrumbs with salt and black pepper. Sprinkle the chicken breasts with salt and black pepper. Dredge them in flour, then dip them in the egg mixture, and finally, roll them in breadcrumbs. Put it aside.
  • Step 3
  • In a large skillet over medium heat, melt 4 tablespoons of butter with 4 tablespoons of olive oil. Sear the chicken breasts on one side for 3-4 minutes, being careful not to burn them. Flip and cook for another 3-4 minutes. Transfer to a rack set on a baking sheet and place in the oven for about 5 minutes, or until cooked through.
  • Step 4
  • Remove the chicken from the oven and turn on the broiler. Place the mozzarella slices on top of the chicken and broil until the cheese is melted.
  • Step 5
  • Heat a small skillet over medium heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil.
  • Step 6
  • Add the tomatoes, season with salt and black pepper, and quickly sauté until the tomatoes begin to break down, about 2 minutes. Add the spinach and garlic and sauté, stirring, until the spinach wilts, 2-3 minutes.
  • Step 7
  • Spoon the tomato and spinach mixture over the chicken and serve.
