Few can resist the delicious golden pieces of fried chicken in a crispy breading. But for those who find the high fat content of this delicacy off-putting, this recipe was created! Breaded chicken is baked in the oven, but it turns out as incredibly crispy as if it were deep-fried. What's the secret? Two. First, you need panko breadcrumbs, which are larger and fluffier than regular breadcrumbs. Second, the chicken is baked on a grill, allowing the heat to circulate freely on all sides.

Ingredients:
- 1 cup of sour milk or kefir
- 1 teaspoon hot sauce
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 teaspoons coarse salt
- 1 whole chicken, 1.5–1.8 kg, cut into 10 pieces
- 2 tbsp. panko breadcrumbs
- 1 teaspoon paprika
- 0.5 tsp cayenne pepper

- In a large bowl, combine the buttermilk, hot sauce, and 1 teaspoon each of garlic powder, onion powder, and salt. Add the chicken and toss to coat. Refrigerate for at least 1 hour or overnight. Step 2
- Preheat oven to 220°C. Step 3
- Place the breadcrumbs in a large zip-lock bag, add the paprika, cayenne pepper, and the remaining tablespoon each of garlic powder, onion powder, and salt. Shake to combine. Remove the chicken from the brine and place it in the bag. Seal the bag and shake vigorously to coat the chicken. Step 4
- Place a rack on a baking sheet and spray it generously with cooking spray. Place the chicken skin-side up on the rack and spray with cooking spray. Bake the chicken until cooked through and golden brown, about 40 minutes.
