Try a slightly modified version of the classic Jewish dish, "kasha varnishkes," made with buckwheat and bow-shaped pasta. In a saucepan over medium-high heat, sauté 1 cup of farro in olive oil. Add 2 cups of water and 1/2 teaspoon of salt. Bring to a boil, then cover and simmer until the water is absorbed, 20-25 minutes.

Meanwhile, cook 450 g (1 lb) of orecchietti according to package directions and drain. Brown 3 tbsp (1.5 oz) of butter and toss with the pasta and farro (or toss with walnut oil). Season with salt.
