Italian pizzelle wafer cookies are especially popular for Christmas, New Year's, and Easter. They require a special waffle iron with round panels decorated with various patterns that imprint on the wafers, giving them a festive look. The pizzelle dough is made from flour, eggs, sugar, and vegetable oil, along with various aromatic spices. This recipe uses maple sugar and maple extract, along with a pinch of nutmeg, to flavor the cookies. Allow the pizzelle to cool completely and become crisp, then dust with powdered sugar and enjoy.


Ingredients:

  • 1.5 cups premium flour
  • 1.5 tsp baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 tbsp. maple sugar
  • 1/3 cup vegetable oil + extra for greasing
  • 1/4 tsp maple extract
  • Powdered sugar, for dusting
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine the flour, baking powder, salt, and nutmeg; make a well in the center. In another large bowl, whisk the eggs with the granulated sugar, maple sugar, vegetable oil, and maple extract. Pour the egg mixture into the well in the flour mixture and whisk until smooth.
  • Step 2
  • Preheat the pizzelle waffle iron until a drop of water sizzles on the surface, about 10 minutes. Lightly brush the hot surface with vegetable oil. Spoon about 1 tablespoon of batter into the center of a circle (if your pizzelle waffle iron has more than one panel, spoon 1 tablespoon of batter onto each panel). Close the waffle iron and cook until steam stops escaping, about 45 seconds.
  • Step 3
  • Open the waffle iron, remove the pizzelle with a small spatula, and transfer to a wire rack to cool completely (the pizzelle will crisp up as they cool). Repeat with the remaining batter, lightly greasing the waffle iron with vegetable oil. Lightly dust the pizzelle with powdered sugar and serve.
