Filet mignon with wine sauce and mushrooms

How to cook - Filet mignon with wine sauce and mushrooms
Kitchen:French,
Time: 50 min.
Complexity: easily
Servings: 2

This luxurious dish requires just five ingredients: filet mignon steaks, butter for frying, shallots, mushrooms, and red wine for the sauce. It's best to fry it in a heavy-bottomed cast iron skillet. The steak turns out perfect, with a crispy, golden-brown crust and incredibly tender inside. Use the remaining juices to make a delicious sauce by reducing the red wine and combining it with the fried mushrooms, shallots, and butter. The combination of different mushrooms creates a stunning flavor paired with the beef. A perfect dish for a romantic evening.

Ingredients:

  • 2 filet mignon steaks, 2.5 cm thick.
  • 3 tablespoons unsalted butter
  • 1 shallot, chopped
  • 110 g of chopped mushroom mixture
  • 1 cup red wine

1/3 cup (st.) - 80 ml.

Preparation:

    Step 1
  • Generously season each side of the steaks with salt and black pepper. Let them rest at room temperature for about 20 minutes before grilling.
  • Step 2
  • In a cast iron or other heavy-bottomed skillet, heat 1 tablespoon of butter over medium heat. Add half the shallot and sauté for a few minutes, until softened. Add the mushrooms and sauté until the liquid has evaporated, about 5 minutes. Season with salt and pepper to taste. Transfer the sautéed mushrooms to a platter and set aside. Wipe out the skillet.
  • Step 3
  • Heat another 1 tablespoon of butter in a skillet over high heat. It will bubble and foam, and once the foam subsides, add the steaks. Fry for about 4 minutes on each side. Transfer to a plate and cover with foil.
  • Step 4
  • Reduce heat to medium-low. Add the remaining shallots and sauté for 1-2 minutes. Turn off the heat and pour in the wine. Return the heat to high, bring to a boil, and reduce the liquid by half. Stir in the remaining 1 tablespoon of butter. Stir in the fried mushrooms.
  • Step 5
  • Spoon the sauce over the steaks and serve.
