Turkey aspic with mushrooms

Recipe for turkey and mushroom aspic with mushroom sauce.


Ingredients:


For the aspic:
  • 500 g turkey fillet
  • 1 liter of broth
  • 150 g of mushrooms
  • 1 carrot
  • 25 g of gelatin
  • 4 cloves of garlic
  • Parsley to taste
  • Salt and spices to taste

For the sauce:
  • 150 g of mushrooms
  • 300 ml. mushroom broth
  • 2 carrots
  • 2 beets
  • 1 onion
  • 1 tsp horseradish
  • 100 ml of wine
  • Salt and spices to taste
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Boil the carrots and mushrooms and chop.
  • Step 2
  • Boil the turkey and cut it.
  • Step 3
  • Chop the garlic and herbs.
  • Step 4
  • Gelatin dilute in broth.
  • Step 5
  • Place carrots, mushrooms, fillet, garlic and herbs into molds, pour in broth and leave in the refrigerator until set.
  • Step 6
  • Prepare the sauce: Grind all ingredients in a blender until smooth, pour into a tall saucepan and cook for 10 minutes.

    Serve the aspic with sauce.
