The gingerbread man is one of the symbols of Christmas, and his image can be captured not only on gingerbread figures but also on a large festive cake. The easiest way to create such a cake is with cupcakes. Arrange the gingerbread cupcakes closely together to form a man, then cover them with chocolate-ginger frosting to ensure there are no gaps between the cupcakes and the figure looks seamless. Decorate the gingerbread man with various candies and lollipops, creating a face and buttons, and using royal icing to outline the cake. This cake will brighten everyone's day, and you don't even need to cut it. Simply separate the cupcakes from the man and enjoy.


Ingredients:


Ginger cream
  • 440 g (2 cups) unsalted butter, room temperature
  • 3 tablespoons of preservative-free molasses
  • 1 tbsp chocolate-hazelnut spread, such as Nutella
  • 3 cups powdered sugar
  • 0.5 cup unsweetened cocoa
  • 1 teaspoon ground ginger
  • 1 teaspoon natural vanilla extract
  • 1/4 teaspoon salt

Gingerbread Man
  • 48 mini cupcakes (preferably gingerbread), remove paper cupcake liners
  • Various candies, gummies, and royal icing for decorating
  • Special equipment: a large, flat serving dish, a large pastry bag with a star tip, and a small pastry bag with a simple round tip
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For the ginger cream: In a large bowl, beat the butter, molasses, and chocolate-hazelnut spread with a mixer on medium speed until smooth. Scrape down the sides of the bowl. Add the powdered sugar, cocoa, ginger, vanilla, and salt and beat on medium-low speed, increasing the speed as you add the ingredients. Beat on medium-high speed for a few seconds, until the cream is completely smooth.
  • Step 2
  • For the gingerbread man: Arrange the cupcakes on a plate in the shape of a person (use about 14 cupcakes to make the head, 14 cupcakes for the arms and chest, and 20 cupcakes for the belly and legs).
  • Step 3
  • Transfer the frosting to a large pastry bag fitted with a star tip and pipe swirls, generously covering the tops of each cupcake (the frosting on each cupcake should touch the frosting on the cupcake next to it). Then fill in the gaps with frosting. Decorate the gingerbread man with lollipops and candies. Fill a small pastry bag fitted with a round tip with royal icing and decorate the gingerbread man as desired.
