Amaretti Cookie Cake

This chocolate cake is incredibly quick and easy to make, and stands out from the typical layer cakes with its simple, Italian-inspired look. It consists of just one layer, baked with almonds, crushed amaretti biscuits, butter, eggs, chocolate, and orange zest. The top is dusted with cocoa powder. It combines the flavors of almond, citrus, and chocolate beautifully, and has a brownie-like texture. This cake makes a stylish and subtle end to a Christmas or New Year's dinner.
Ingredients:
- 1 tbsp fine amaretti cookies (about 60 gr.)
- 3/4 cup dark chocolate
- 1 cup almond needles
- 110 g butter, room temperature
- 2/3 cup sugar
- 2 tsp. grated orange zest
- 4 large eggs
- Cocoa powder, for dusting
- Butter-scented cooking spray
1 glass (st.) - 250 ml.

2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.

Preparation:
- Step 1
- Preheat oven to 350°F (175°C). Spray a 9-inch springform pan with cooking spray. Refrigerate. Step 2
- Microwave the chocolate, stirring every 20 seconds, for 1 minute until melted and smooth. Step 3
- In a food processor, pulse the almonds and cookies until they form fine crumbs and transfer to a medium bowl. Step 4
- Place the butter and sugar in a food processor and blend until smooth and creamy. Add the grated orange zest and blend. Add the eggs one at a time. Mix well. Scrape down the sides of the bowl and blend again. Step 5
- Add the almond flakes and melted chocolate. Stir. Scrape down the sides of the bowl and stir again. Step 6
- Pour the batter into the prepared pan. Bake until the cake is puffed in the center and a tester inserted into the center comes out clean, about 35 minutes. Cool the cake in the pan for 15 minutes. Step 7
- Transfer the cake to a serving plate, sift cocoa powder over it and serve!
