Perfect Oven-Baked Chicken

To make a delicious holiday chicken with a crispy skin, all you need are three additional ingredients: lemons and rosemary for flavor, and butter. Rub the butter, mixed with lemon zest and chopped fresh rosemary, all over the chicken, including under the skin, to ensure the skin is crispy and browned, and the chicken meat is juicy and flavorful. It's also important to pat the chicken dry with paper towels before cooking. Stuff any remaining lemons and rosemary sprigs into the cavity of the chicken before baking—a lot of flavor never hurts!
Ingredients:
- 1 whole roasting chicken, washed and patted dry
- 110 g softened butter
- Zest of two lemons
- 4 sprigs of fresh rosemary
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Step 1
- Preheat oven to 200°C. Line a baking sheet with foil. Step 2
- Place the softened butter in a bowl along with the lemon zest. Remove the leaves from one sprig of rosemary, finely chop, and add to the butter along with salt and black pepper. Stir. Step 3
- Place the chicken breast-side up on a foil-lined baking sheet. Using your fingers, rub the oil mixture all over the chicken, including under the skin and inside the cavity. Step 4
- Squeeze the juice of one lemon over the chicken, then place 4 lemon halves (if they fit!) into the chicken cavity along with the remaining three whole rosemary sprigs. Step 5
- Place the chicken in the oven and roast until done, about 1 hour and 15 minutes. The skin should be golden brown and the juices should be bubbling.
