Ingredients:

  • 4 cups premium flour
  • 1 packet (7 g) of fast-acting yeast (2 and 1/4 tsp)
  • 7 tbsp extra-virgin olive oil + extra for greasing your hands
  • 1 tbsp. honey
  • 1 tbsp coarse salt
  • Chopped vegetables and fresh herbs for garnish
  • Salt flakes, for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, combine 1.5 cups flour with 1 cup room temperature water and 1/4 teaspoon yeast. Knead into a rough dough, making sure there are no dry pockets of flour or yeast.
  • Step 2
  • Cover with plastic wrap and let rise at room temperature until large air bubbles appear on the surface, about 4 hours.
  • Step 3
  • In a liquid measuring cup, combine 3/4 cup warm water with 3 tablespoons olive oil and honey; stir to dissolve the honey. In a large bowl, combine the remaining 2.5 cups flour, 2 teaspoons yeast, and coarse salt; stir to evenly distribute the ingredients and make a well in the center.
  • Step 4
  • Pour the honey mixture into the well. Add the risen dough and mix. The dough will be very sticky, but continue kneading until it becomes coarse, making sure there are no dry pockets of flour or yeast.
  • Step 5
  • Cover with plastic wrap and let rise at room temperature until doubled in size and air bubbles appear on the surface, 1-2 hours.
  • Step 6
  • Spray a rimmed baking sheet with cooking spray, then pour 3 tablespoons of olive oil into the center. Grease your hands with oil, then run your palms down the inside of the bowl and lift out the dough (it will deflate).
  • Step 7
  • Transfer the dough to a baking sheet and turn it over to coat with oil. Form the dough into a 30 cm long oval, carefully tucking the edges in if the dough spreads too much.
  • Step 8
  • Cover with plastic wrap and let rise at room temperature until the dough has doubled in size and air bubbles appear on the surface, 30 minutes to 1 hour.
  • Step 9
  • Preheat the oven to 230°C. Unfold the dough, then use your fingertips to make indentations all over the surface. Top with chopped vegetables and herbs, creating a floral pattern.
  • Step 10
  • Drizzle the dough and vegetables with the remaining 1 tablespoon of olive oil and gently rub it into the vegetables, pressing them into the dough. Sprinkle with coarse salt. Bake until the bottom of the focaccia is golden brown, the top is golden, and the vegetables are tender, 25-30 minutes. Let cool on the baking sheet for at least 15 minutes.
