Ingredients:
Sausage cutlets
- 450 g raw spicy breakfast sausages
- 220 g raw Mexican chorizo sausage
Eggs
- 2 tablespoons salted butter
- 1/4 cup heavy cream
- 0.5 tsp salt
- 1/4 tsp freshly ground black pepper
- 6 large eggs, lightly beaten
- 1 can (110g) canned green chilies, drained
Sandwiches
- 2/3 cup chipotle mayonnaise
- 6 English muffins, halved and toasted
- 6 slices pepper jack cheese

- Step 1
- Cutlets:
Combine the sausage and chorizo in a bowl until smooth. Form into 6 patties. Heat a skillet over medium-high heat. Cook the patties in a dry skillet, turning as needed, until cooked through, about 10 minutes.
Step 2 - Eggs:
Meanwhile, melt the butter in a large nonstick skillet over medium heat. In a bowl, combine the heavy cream, salt, pepper, eggs, and green chili pepper. Whisk with a fork until smooth.
Step 3 - Pour the egg mixture into the skillet and cook, stirring occasionally, like an omelet, until the eggs begin to set, about 2 minutes. Continue cooking until the omelet is almost completely set, another 2 minutes. Using a spatula, flip the omelet in one motion. Cook for another minute, then transfer to a cutting board. Cut into 6 pieces. Step 4
- Assemble sandwiches by spreading a little chipotle mayonnaise on the bottom halves of English muffins. Step 5
- Place a patty, a slice of cheese, and a portion of omelet on the bottom half of each bun. Spread a little more mayonnaise on the top halves of the English muffins and top them with the filling. Serve the sandwiches hot.
