Migas is a popular breakfast dish in Spain and Latin America, typically cooked in a skillet using day-old bread, fresh vegetables, and eggs. Prepared in the Tex-Mex style, migas includes pieces of fried tortilla, lots of sweet and hot peppers, fresh tomatoes, eggs, and grated cheese. The dish is quick to prepare, packed with protein and healthy vegetables, and the crispy pieces of corn tortilla give it a unique texture—what could be better for a filling, healthy breakfast?


Ingredients:

  • 8 large eggs
  • 3 tablespoons unsalted butter
  • 3 tablespoons of vegetable oil
  • 4 corn tortillas, cut into 1cm wide strips, then into 5cm long rectangles.
  • 0.5 cup finely chopped red bell pepper
  • 1 can (110g) canned green chili peppers, drained
  • 1/2 cup chopped sweet onion, such as Vidalia
  • 2 plum tomatoes, seeded and chopped
  • 0.5 cup grated pepper jack cheese
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, vigorously beat eggs with 2 tablespoons water.
  • Step 2
  • Fry the tortilla stripsIn a large skillet, heat the butter and vegetable oil over medium-high heat. Once the butter has melted, add the tortilla strips and cook, stirring, until golden brown and crispy.
  • Step 3
  • Prepare the vegetablesOnce the tortillas are golden brown, add the bell pepper, chili, and onion to the pan. Season with a pinch of salt and black pepper to taste. Cook until the vegetables are tender, about 5 minutes.
  • Step 4
  • Add the eggs to the pan, season with salt, and reduce the heat to medium-low. Cook, stirring, until most of the moisture has evaporated, then remove from the heat. Stir in the tomatoes. Serve sprinkled with cheese.
