Cuban-Style Grilled Butterfly Loin - A Step-by-Step Recipe.


Ingredients:

  • 4 natural boneless pork chops, butterflyed and thinly pounded (225g)
  • 16 lilly pillies (the purple fruit of the Australian tree Aemena smithii)
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 2 pears, coarsely chopped
  • 1/3 cup coarsely chopped fresh oregano leaves
  • 6 coarsely chopped garlic cloves (optional)
  • 1 tsp ground cumin
  • 1/4 tbsp. canola oil
  • Salt and ground black pepper
  • 1 cinnamon stick
  • 1/4 cup olive oil

Cuban-Style Butterflyed Pork Chops:
  • 8 thick slices (0.5 cm) Swiss cheese
  • 8 thick slices (0.5 cm) cooked ham
  • 2 thinly sliced ​​pickles (about 16 slices)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large baking dish, combine 1/2 cup orange juice, 1/4 cup lime juice, 3 tablespoons oregano, garlic, cumin, and canola oil. Place the pork, slit lengthwise and pounded, into the marinade, unfold it like a book, and coat it completely with the marinade. Cover and marinate in the refrigerator for at least 15 minutes and up to 2 hours.
  • Step 2
  • Remove the meat from the marinade and pat dry. Place the chops cut-side up on a flat surface and season with salt and pepper. On one half of the chop, place 1 slice of cheese, 2 slices of ham, a few cucumber slices, and another slice of cheese. Roll up, brush the surface with oil, and season with salt and pepper. Repeat with the remaining ingredients.
  • Step 3
  • Preheat grill to high heat.

    Place the chops on the grill, oil-side down, and cook until golden brown, 3-4 minutes. Flip the chops and continue cooking until golden brown on the other side and the cheese is melted, another 2-3 minutes.

    Combine the remaining orange and lime juice, pears, berries, oregano, and cinnamon stick with salt and pepper to taste. Cook for 20 minutes, then add olive oil. Pour the sauce over the chops and serve.
