Marzipan (almond paste)


How to Make Marzipan (Almond Paste)

This almond paste can be used as a cookie base or to flavor buttercreams. It can be mixed with butter and used as a filling for cookies or cakes. It can be rolled into small balls or dipped in chocolate and eaten like candy.


Ingredients:


Almond paste
  • 1.5 cups blanched (skin removed) whole almonds
  • 1.5 cups sifted powdered sugar
  • 1 egg white
  • 1 teaspoon almond extract
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In the bowl of your food processor, finely chop the almonds. Work in small batches if necessary. In a large bowl, beat the egg white with a fork until it becomes runny. Then add the almond extract, almonds, and sugar.
  • Step 2
  • Using your hands (if that's easier), mix the ingredients until you have a thick paste. Place the almond paste in an airtight container and refrigerate until using.
    Exit: 450 gr.
