Ingredients:

  • 3 egg whites, room temperature
  • A pinch of salt
  • 1/4 tsp cream of tartar or cornstarch
  • 3/4 cup powdered sugar
  • 1 tsp mint extract or 2 tsp grated lime zest (optional)
  • Various food coloring (optional)
  • 1/2 - 2/3 cup chocolate chips (optional)
  • Multicolored granulated sugar, melted chocolate, confetti, for decoration
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 120°C (250°F). Line 2 baking sheets with parchment paper. Beat the egg whites and salt with a mixer on medium speed until foamy. Add the cream of tartar and beat on high speed, adding sugar 1 tablespoon at a time, then add the extract or zest. Continue beating until the mixture is thick and holds its shape, about 6 minutes.
  • Step 2
  • For colored meringues, add food coloring to the egg mixture, or use a brush to color it. For chocolate meringues, add chocolate shavings to the egg mixture.
  • Step 3
  • Fill a pastry bag with the egg mixture and pipe them onto the prepared baking sheets, spacing them 5 cm apart. Sprinkle some of the meringues with colored sugar. Bake the meringues in the oven for 1 hour, then turn off the oven and let them rest in the oven to dry, about 2 hours. Sprinkle some of the meringues with confetti, and drizzle melted chocolate over others.
