Sugar cookies are made with flour, sugar, butter, and egg. Preparation:

    Step 1
  • Bake some cookiesIn a medium bowl, sift together the flour, ginger, baking powder, and salt. In a large bowl, beat the butter and sugar with a mixer on medium-high speed until fluffy, about 5 minutes. Add the egg and beat until smooth. Reduce the mixer speed to low; add the flour mixture in two additions and knead.
  • Step 2
  • Divide the dough in half and place it between two sheets of plastic wrap; shape each piece of dough into a disk. Wrap in plastic wrap and refrigerate for 4 hours.
  • Step 3
  • Line two baking sheets with parchment paper. Working with one piece of dough at a time, lightly flour the disk and roll it out to a thickness of 0.3 cm. Cut out shapes with 7.5 cm cookie cutters and arrange them on the prepared baking sheets, spacing them 2.5 cm apart. Refrigerate for 30 minutes.
  • Step 4
  • Position racks in the upper and lower thirds of the oven; preheat the oven to 350°F (175°C). Bake, rotating the baking sheets halfway through, until the cookies are light golden brown around the edges, 15 to 18 minutes. Let cool on the baking sheets for 5 minutes, then transfer the cookies to wire racks to cool completely.
  • Step 5
  • Prepare the glazeIn a large bowl, whisk together the powdered sugar and egg whites. Add 5 tablespoons of water; beat with a mixer on medium speed until soft peaks form, adding an additional 1 tablespoon of water if necessary. If desired, tint the icing with food coloring. Spread the icing on the cookies or pipe them using a pastry bag. Sprinkle with nonpareils. Let set for about 1 hour.
