How to Make Old-Fashioned Sugar Cookies

Among the vast variety of cookies available today, these sugar cookies, while considered old-fashioned and simple, are made specifically for the holidays and covered with icing. So at first glance, they may seem bland and unsweetened, but once you glaze them, everything falls into place. Bake these cookies for any holiday, cutting them into themed shapes, glazing them with royal icing (the recipe is also provided below), or simply dusting them with colored sugar and serving them to your loved ones and children, who will be especially delighted with such a treat.


Ingredients:


Sugar cookies
  • 220 g butter
  • 1 cup granulated sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 3 cups of flour
  • 2 tsp baking powder
  • 1 teaspoon of salt
  • Colored sugar and milk for decoration, or royal icing (see recipe below)

Royal icing
  • 0.9 kg powdered sugar
  • 0.5 cup + 2 tablespoons dry egg white
  • Food coloring (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Sugar cookies


    In a large bowl, beat the butter and sugar with an electric mixer. Stir in the eggs and vanilla.
  • Step 2
  • In another large bowl, combine the flour, baking powder, and salt and mix well. Fold the flour mixture into the butter mixture, 1 cup at a time. Refrigerate the dough for 3-4 hours.
  • Step 3
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll out the dough and cut out various shapes using a knife or cookie cutters. Place the shapes on the prepared baking sheet. If decorating the cookies with colored sugar, brush the shapes with milk and sprinkle with colored sugar (if decorating with royal icing, bake the cookies first). Bake until the cookies begin to darken around the edges, 10-15 minutes, depending on the size of the shapes.
  • Step 4
  • Transfer the cookies to a wire rack to cool completely. If using royal icing, decorate the cookies as desired.

  • Royal icing


    In a large bowl, combine the powdered sugar, dry egg white, and 3/4 cup water. Mix with a mixer on low speed until the icing is stiff and forms peaks; the icing should be snow-white and thick, but not fluffy or airy. If you beat the icing too vigorously, it will become airy and difficult to work with. If this happens, let the icing settle, then vigorously beat it with a silicone spatula until smooth.
  • Step 6
  • Add up to 1 tablespoon of food coloring and stir with a silicone spatula until the color is uniform. Gel colors are best for royal icing, as liquid colors will dilute it. Be careful not to add too much coloring, as this will cause the icing to lose its shine and its structure to deteriorate within a couple of days. Keep the icing at room temperature, covering the surface with plastic wrap.
