Tortilla soup with chicken and corn

Tortilla soup, one of Food Network Kitchens' most popular recipes, can be made with leftover chicken, flavored with chipotle peppers in adobo sauce, fresh cilantro, and a squeeze of lemon juice for an even brighter flavor.

Ingredients:

  • 1 cup shredded cooked chicken
  • 1 cup corn kernels, fresh or frozen (defrosted)
  • 2 tablespoons of vegetable oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, sliced
  • 1 crushed chipotle pepper in adobo sauce
  • 1 tbsp chili powder
  • 2 teaspoons coarse salt
  • 6 cups unsalted chicken broth
  • 1 ripe tomato, chopped
  • 1/2 cup cilantro leaves
  • 1/4 cup freshly squeezed lime juice (from 2 limes)
  • About a dozen broken into pieces tortilla chips,
    recipe corn flour tortillas
  • Lime wedges, optional
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium saucepan, heat the oil over medium heat. Add the onion, garlic, chipotle pepper, chili powder and salt and cook until the onion is softened, about 5 minutes.

    Pour in the chicken broth, bring to a boil, reduce heat slightly, and simmer, uncovered, for 10 minutes. Add the corn and cook for another 5 minutes.
  • Step 2
  • Remove the pan from the heat and add the tomatoes, chicken, cilantro, and lime juice. Divide the corn chips among 4 warmed bowls, ladle the soup over them, and serve with lime wedges, if desired.

    Know-how: To ensure that every drop of juice is gone from small limes, microwave them for a few seconds before cutting them in half, then roll them in your palm to break up the juice sacs that make up the pulp.

    Add some stew, like chili with homemade tortillas, to your chicken soup for a filling meal.
