Spinach Puff Pastry Pie "Spanakopita"

Ingredients:

  • 900 g of filo dough
  • 2.7 kg chopped spinach
  • 2 diced onions
  • 5 bunches of chopped green onions
  • 1 cup chopped fresh dill
  • 1 teaspoon ground nutmeg
  • 1 teaspoon black pepper
  • 1/2 tsp salt
  • 2 - 3 tbsp. l. olive oil
  • 1.8 kg crumbled feta cheese
  • 7 eggs of category CO
  • 900 g melted butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large saucepan, heat olive oil and sauté the onion. Add green onions, dill, nutmeg, black pepper, and salt.

    Blanch the chopped spinach in boiling water, stirring occasionally (it should turn pale but still be bright green). Combine with the ingredients in the pan. Add the crumbled feta cheese and eggs, making sure the mixture has cooled slightly to prevent curdling, and stir.
  • Step 2
  • Brush 450g of filo pastry with melted butter, one sheet at a time, placing them in layers on a tray large enough to hold all the sheets.

    Then spread the spinach mixture on top and, sheet by sheet, layer the remaining phyllo dough on top and grease it with butter. Score the dough with a knife and make sure the edges are tucked in, then spray the surface with a little water.

    Bake at 160°C for 45 minutes until golden brown.
