Jamie Oliver's Beer-Braised Beef with Cheese in a Puff Pastry Topping.

There's nothing better than a hearty Guinness beef pie to warm you up on a chilly day. Served with green peas.


Ingredients:

  • 1 kg. beef brisket, cut into 2 cm cubes.
  • 440 ml of Guinness beer
  • 3 heads of red onion
  • 3 cloves of garlic
  • 2 carrots
  • 2 stalks of celery
  • 4 forest mushrooms
  • A few sprigs of rosemary
  • Olive oil
  • 2 heaped tablespoons of wheat flour
  • 150 gr. cheddar cheese
  • 170 gr. puff pastry
  • 1 large egg
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190ºC.

    Peel and chop the onion, garlic, carrot and celery, slice the mushrooms and finely chop the rosemary.

    Heat the oil in a large nonstick frying pan, add the onion and cook over low heat for 10 minutes or until softened, stirring occasionally.
  • Step 2
  • Increase the heat, add the garlic, carrots, celery and mushrooms, stir, then add the beef, rosemary, a pinch of sea salt and 1 teaspoon black pepper.

    Fry for 3 or 4 minutes, then add the beer, stir in the flour and add enough water.
  • Step 3
  • Bring to a boil, cover the pan, and place in the oven for 2 hours 30 minutes, or simmer until the meat is tender. The ideal pie filling should not be too runny, so if it's still runny, return the pan to the stovetop and simmer until the sauce thickens.
  • Step 4
  • Coarsely grate the cheese, mix half of the cheese with the filling, then place it in a pie dish and leave to cool slightly.

    Meanwhile, flour a clean work surface and roll out the puff pastry thinly.

    Sprinkle the remaining cheese over the filling. Place the dough over the filling and tuck the edges into the pan, creating a pattern on top.
  • Step 5
  • Beat the egg, then brush it over the top of the pie and bake in the oven for 45 minutes, or until the pastry is set and golden brown. Serve the pie with green peas.
