- 4 bone-in skinless chicken thighs or bone-in breast halves (about 170g each)
- 1 and 1/3 cups crispy rice cereal (breakfast cereal)
- 2 and 1/4 cups bagel croutons or Melba toast
- 5 tsp olive oil
- 3/4 teaspoon hot paprika
- 1.5 cups of 2% yogurt
- 1 teaspoon mustard
- 2 bunches of shallots
- Harissa, chili sauce or ketchup for serving

Preparation:
- Step 1
- Preheat oven to 250°C. Place a rack on a foil-lined baking sheet and grease the rack generously with oil. Step 2
- Finely grind the rice cereal and bagel chips in a food processor and transfer to a large resealable plastic bag. Add 3 teaspoons of olive oil, paprika, 2 teaspoons of salt, and pepper to taste, and pulse to combine. Step 3
- Whisk 1/2 cup yogurt and mustard together in a shallow bowl. Coat the chicken thoroughly with the mixture. Then place the chicken in the bag, seal it tightly, and shake to coat the chicken completely with the crushed cereal and chips. Place the chicken on a grill rack and spray with cooking spray. Step 4
- Brush the onions with the remaining 2 teaspoons of olive oil and place them next to the chicken. Bake until the chicken is crispy and a thermometer inserted into the thickest part registers 160°F (70°C), about 30 minutes.
Make the sauce: In a bowl, combine the remaining 1 cup of yogurt and harissa to taste. Serve the chicken and shallots with the sauce.
