Mexican fajitas differ from similar burritos or tacos in that all the fillings are laid out individually on the table, and guests can add whatever they want to their tortillas. This is a great solution if you're hosting a house party and are short on time for food preparation. Gather everyone around the table, centered on guacamole, sour cream, grated cheese, sauces, salsa, and a large baking sheet filled with oven-roasted bell peppers and chicken. This dish will take no more than half an hour to prepare. To speed up the cleaning process, line the baking sheet with foil beforehand.

Ingredients:

  • 1 tbsp. chili powder
  • 450 g small sweet peppers (12-15 pcs.), cut in half and removed from stems and seeds
  • 1 large onion, sliced ​​into thin half rings
  • 2 tbsp. l. olive oil
  • 0.7 kg skinless and boneless chicken breasts
  • Juice of 1 lime + lime wedges for serving
  • 8 wheat fajita tortillas, warmed
  • Grated cheese, guacamole, hot sauce, salsa and sour cream, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to high, grill mode. Line a baking sheet with foil.
  • Step 2
  • In a small bowl, combine the chili powder, 2 teaspoons salt, and 1 teaspoon pepper. Place the peppers and onions on the prepared baking sheet, drizzle with 1 tablespoon olive oil, and sprinkle with half of the chili powder mixture. Roast in the oven until softened and just beginning to char, about 10 minutes.

  • Meanwhile, slice the chicken into 1/4-inch-thick pieces and combine in a large bowl with the remaining chili powder mixture and 1 tablespoon olive oil.

  • Once the peppers have softened and begun to brown, about 10 minutes, arrange the chicken on top of the peppers and onions and return the baking sheet to the oven. Cook until the chicken is cooked through and beginning to brown, about 5 minutes more. Squeeze with lime juice.

  • Serve fajitas with warm tortillas, shredded cheese, guacamole, hot sauce, salsa, sour cream and lime wedges.
