- 4 skinless, boneless chicken breasts (about 200g each)
- 1 tbsp. l. rice vinegar
- 1/4 cup toasted white sesame seeds
- 1/4 cup black sesame seeds
- 2 tbsp. l. olive oil
- 1 tsp. sesame oil

- Step 1
- Brush both sides of the chicken with vinegar. Sprinkle both sides with 1 teaspoon of salt and a few turns of black pepper. Combine the white and black sesame seeds in a shallow bowl. Press the chicken firmly into the sesame seeds so they adhere well to both sides of the breasts. Step 2
- In a large skillet, heat the olive oil and sesame oil over medium-high heat. Add the chicken and cook, undisturbed, until the chicken begins to turn white, about 1 minute. Flip the chicken and cook, undisturbed, until the other side turns white, about 1 minute. Step 3
- Reduce heat to low, cover, and simmer until the chicken is cooked through and a thermometer inserted into the thickest part of the breast registers 165°F (74°C), about 10 minutes. Let cool completely before refrigerating. Serve whole or sliced across the grain. Cooked chicken can be stored for up to 4 days..
