Institution The Carousel, which has been operating in New Orleans since 1949, boasts not only its unique 25-seat carousel bar but also several cocktails invented within its walls. The most famous of these is the Vieux Carré (Old Square) cocktail, made with rye whiskey and the locally beloved Pichot bitters.


Ingredients:

  • 15 ml. Benedictine liqueur
  • 15 ml of cognac
  • 30 ml rye whiskey
  • 15 ml sweet vermouth
  • 6 drops of Angostura
  • 6 drops of Pisho
  • Lemon zest twist, for garnish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • Combine Benedictine, cognac, whiskey, vermouth and both bitters in a small glass with ice; stir well.

  • Garnish the cocktail with a lemon zest twist.
