Roasted garlic has a rich, sweet-spicy flavor that truly elevates the creamy sour cream and cream cheese dip. Add fried pancetta pieces and a little fresh dill to the sauce, and serve as an appetizer with crackers or fresh vegetables for dipping.

Ingredients:

  • 2 heads of garlic
  • 1 tbsp extra-virgin olive oil
  • 110 g pancetta, finely chopped
  • 450 g sour cream
  • 110 g of cream cheese at room temperature
  • 0.5 cup chopped fresh dill
  • Crackers for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 350°F (175°C). Cut the top third of each head of garlic, exposing the cloves, and wrap in foil. Roast the garlic until the cloves are very soft and golden, about 45 minutes. Let cool slightly, then squeeze the cloves out of the skins and finely chop.
  • Step 2
  • Meanwhile, heat oil in a medium skillet over medium heat. Add the pancetta and cook, stirring occasionally, until crisp, about 8 minutes. Using a slotted spoon, transfer the pancetta to paper towels to drain any excess oil.
  • Step 3
  • In a large bowl, whisk together the sour cream and cream cheese until smooth. Add the pancetta, roasted garlic, dill, 1 teaspoon salt, and 1/2 teaspoon black pepper and stir to combine. Serve with crackers.
