Garlic makes a budget-friendly yet delicious Mediterranean-style appetizer. Simply roast a whole head of garlic, then mash the softened cloves to create a flavorful paste. Spread it on a baguette, sprinkle with cheese and parsley, and bake until the bread is crispy and the cheese is melted.

Ingredients:

  • 1 head of garlic
  • 3 tablespoons extra-virgin olive oil
  • 1 baguette, 30 cm long, cut in half lengthwise
  • 2 tbsp. l. grated parmesan
  • 2 tbsp chopped fresh parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Cut off the top third of the garlic head, exposing the tips of the cloves. Place on a piece of foil, drizzle with 1 tablespoon olive oil, and sprinkle with 1/4 teaspoon each of salt and black pepper. Wrap tightly and roast until the garlic is golden brown and very soft, about 45 minutes; let cool slightly.
  • Step 3
  • Unwrap the garlic and pour the garlic oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the skins. Add the remaining 2 tablespoons of oil and mash with a fork until a smooth paste forms; season with salt and pepper to taste.
  • Step 4
  • Place the bread halves on a baking sheet and spread evenly with the roasted garlic paste. Sprinkle with Parmesan and freshly ground black pepper. Bake until the bread is golden brown and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.
