The secret ingredient in this dish is roasted garlic. It infuses the creamy goat cheese and Parmesan sauce with a rich, sweet and spicy flavor. Toss the sauce with hot, cooked penne pasta and enjoy, garnished with fresh herbs.

Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 whole head of garlic
  • 450 g penne pasta
  • 1 cup of milk
  • 1 shallot, chopped
  • 0.5 cups white wine
  • 90 g crumbled goat cheese
  • 1/3 tbsp. grated parmesan
  • 6 small sprigs of parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Cut the root end off the entire head of garlic and turn it upside down. Wrap it in foil, shaping the foil so it supports the garlic so it stands upright, cut side up, in the oven. Drizzle 1 tablespoon of olive oil over the garlic, allowing it to soak between the skin and cloves, and wrap the foil around the garlic to seal.

  • Bake for about 1 hour, then let the garlic cool enough to handle.

  • Bring a large pot of water to a boil for the pasta. Salt the water and cook the pasta until al dente. Drain and set aside.
  • Step 5
  • Heat the milk in a small saucepan and keep warm. Crush the garlic cloves into a small bowl and mash them. Add a small amount of warm milk to this bowl and whisk until smooth.
  • Step 6
  • In another large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat and sauté the shallots until translucent. Deglaze the bottom of the pan with white wine and let most of the wine evaporate, then reduce the heat to low and add the garlic mixture.
  • Step 7
  • Mix the goat cheese and Parmesan with the remaining hot milk, add to the pan with the garlic-wine sauce, and season with salt and pepper to taste.
  • Step 8
  • Drain the pasta, add it to the pan with the sauce, and toss. Transfer to a serving platter and sprinkle with parsley.
