This special-occasion dish combines two popular dim sum appetizers: sticky rice steamed in a lotus leaf and sticky rice with Chinese sausage. Dried Chinese sausage and dried lotus leaves can be purchased at Asian markets or online.

Ingredients:

  • 3 cups sushi rice
  • 1 large dried lotus leaf
  • 8 dried shiitake mushrooms
  • 3 tbsp. l. peanut butter
  • 3 dry Chinese sausages, diced
  • 1 cup chopped green onions
  • 3 tablespoons grated peeled ginger
  • 1 cup diced jicama (about half a medium jicama)
  • 3 tablespoons lightly salted soy sauce
  • 3 tablespoons Worcestershire sauce
  • 2 tsp. dark sesame oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cook the rice according to package directions. Spread it on a rimmed baking sheet and let it cool.
  • Step 2
  • Soak the lotus leaf in warm water in a roasting pan until pliable, about 1 hour. Soak the mushrooms in a bowl with 2 cups of warm water until soft, about 30 minutes. Remove the mushrooms, reserving the liquid in the bowl, and dice; discard the stems.
  • Step 3
  • Heat the peanut oil in a large skillet over high heat. Cook the sausage, stirring, until golden brown, about 3 minutes. Add the green onions and ginger and cook, stirring, for 30 seconds. Season with salt and pepper to taste. Add the jicama and mushrooms and cook until softened, 2-3 minutes. Add the mushroom liquid, soy sauce, and Worcestershire sauce; simmer, stirring, until the liquid has evaporated, about 4 minutes.
  • Step 4
  • In a large bowl, combine the rice, sesame oil, and mushroom-sausage mixture. Place a lotus leaf in the center of a microwave-safe pie dish. Spoon the rice mixture into the center and press firmly. Fold the leaf to enclose the rice and secure with toothpicks.
  • Step 5
  • Cover the lotus leaf with a damp towel. Wrap the dish tightly in plastic wrap and microwave for about 15 minutes. Unwrap the rice and serve.
