How to Make Stuffed Potatoes

The mashed potatoes, which were filled into the potato halves with their skins, were made from pre-baked potatoes, milk, and cheese.


Ingredients:

  • 8 washed potatoes for baking
  • 1 cup fried bacon pieces
  • 1 cup cheddar or Monterey Jack cheese (or a mix of the two), plus extra for sprinkling
  • 3 tbsp. l. canola oil
  • 225 g salted butter
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 teaspoons of salt and spices
  • 3 chopped green onions
  • Freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 205°C.

    Place the potatoes on a baking sheet. Brush them with canola oil and bake for 1 hour. Make sure they are cooked through.

    Cut the butter into slices. Place in a large bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Reduce the temperature to 180°C.

    Using a sharp knife, cut each potato in half lengthwise. Scrape the flesh into a bowl, being careful not to tear the skin. To help the potatoes hold their shape, leave a thin layer of flesh on the skin. Place the potato cups on a baking sheet.
  • Step 2
  • Mash the potatoes with butter, bacon, and sour cream. Add cheese, milk, salt and spices, green onions, and black pepper to taste. Mix well. (If you plan to freeze this potato mixture, omit the green onions.)

    Fill the potato cups with the filling. It's best to use a generous amount, heaping it. Sprinkle each potato with a little cheese and bake in the oven until heated through, about 15-20 minutes.
