The secret to this simple recipe is using potato croquettes instead of mashed potatoes. "Using potato croquettes not only saves time, but also creates a crispy crust that creates a nice contrast to the beef filling," explain the chefs at Food Network Kitchen.


Ingredients:

  • 700 g of ground beef (15% fat)
  • 450 gr. potato croquettes (about 4 tbsp.)
  • 1 tbsp vegetable oil, plus a little more if needed
  • 1 onion, finely diced
  • 2 cloves of garlic, grated or crushed
  • 2 fresh sprigs of thyme or a pinch of dried thyme
  • 2 tbsp. flour
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1.5 tsp soy sauce
  • Salt and ground black pepper
  • 300 g frozen green pea and carrot mix
  • 1/2 cup grated sharp yellow cheddar cheese
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a large skillet over high heat for 2 minutes, then add the oil. (It will sizzle and begin to smoke slightly—this is normal.) When you see smoke, add the ground beef and spread it evenly across the pan.

    Without touching the meat, let it brown for 3 minutes on one side, then begin to break it up into pieces and brown it on all sides until there are no pink parts, about 4 more minutes. Using a slotted spoon, transfer the beef to a medium bowl.
  • Step 2
  • Reduce heat to medium and discard all fat from the pan, reserving 2 tablespoons. Add the onion, garlic, and thyme, stir, and cook until the onion is soft and translucent, about 5 minutes. Add the flour and tomato paste and cook, stirring, for 2 minutes.

    Add the browned beef, beef broth, Worcestershire sauce, soy sauce, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper and bring to a boil. Reduce heat and simmer until the sauce thickens, about 4 minutes. If using, remove the thyme sprigs. Add the peas and carrots.

  • Preheat oven to 220°C. Transfer the mixture to a 20x20cm square casserole dish, top with potato croquettes, and sprinkle with cheddar cheese. Bake for 20-25 minutes, until the potato croquettes are crispy and the sauce in the meat layer begins to simmer along the edges of the dish.
