Sweet potato croquettes - detailed recipe.


Ingredients:

  • 700 g sweet potatoes (about 3 medium tubers), pierced with a fork
  • Cooking spray
  • 4 cups finely crushed potato chips sweet potatoes
  • 1/4 cup grated onion
  • 2 tbsp (30 g) unsalted butter, room temperature
  • 1 large egg
  • Coarse salt and freshly ground pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha sauce (Asian chili sauce)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C. Place potatoes on a rack and bake until tender, about 50 minutes. Then cool completely.
  • Step 2
  • Spray a baking sheet with cooking spray. Peel the potatoes, place them in a large bowl, and mash until smooth. Stir in 1.5 cups crushed potato chips, onion, butter, and egg. Season the mixture with 1/2 teaspoon salt and pepper to taste; mix thoroughly.
  • Step 3
  • Spread the remaining 2.5 cups crushed chips on a plate. Take about 1 tablespoon of the potato mixture and use your hands to form a small cylinder about 2.5 cm long. Form 36 more cylinders with the remaining mixture. Roll the cylinders in crushed chips and place them on the prepared baking sheet; spray with cooking spray. Bake the croquettes in the oven, rotating the baking sheet halfway through, until crisp and golden brown, about 30 minutes. Sprinkle with salt.
  • Step 4
  • Meanwhile, combine the mayonnaise and Sriracha sauce in a small bowl. Serve the potato croquettes with the sauce.
