Rava Dosa lacy pancakes with sweet potato and cumin filling - a detailed recipe.


Ingredients:

  • 1 cup rice flour
  • 1 teaspoon coarse salt
  • 1 can (380 g) coconut milk
  • 1 egg
  • 1 tbsp palm sugar
  • 1 tbsp. grated fresh ginger
  • 1 tsp. sesame oil
  • 1/2 tbsp. ghee
  • Sweet Potato and Cumin Filling (see recipe below)
  • 6 green onions (blanch the green parts)
  • Additional equipment: cast iron frying pan with a diameter of 10 cm.

Sweet Potato and Cumin Filling:
  • 3 sweet potatoes, peeled and cut into 2.5 cm cubes
  • 2 tbsp (30 g) butter
  • 1 white onion, thinly sliced ​​(about 450 g)
  • 2 tsp ground cumin
  • 2 chopped green chili peppers
  • 1 teaspoon crushed garlic
  • 1 teaspoon chopped fresh ginger
  • 1/2 tsp ground coriander
  • 1/2 tsp. mustard seeds
  • 1/4 tsp ground turmeric
  • 1 tbsp chopped fresh coriander
  • 1 teaspoon lemon juice
  • 1 teaspoon coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, combine the rice flour and salt and make a well in the center. Combine the coconut milk, egg, sugar, ginger, and sesame oil. Pour the egg mixture into the well and stir until smooth. Let the dough rest for 10 minutes before cooking.
  • Step 2
  • Heat 1/2 teaspoon of ghee in a cast iron skillet over medium-high heat. Add 30 grams of batter to the pan. Cook until the edges are crispy. Flip the rava dosa over to brown the top. Roll the sweet potato and cumin filling into the pancake and tie with a green onion. Repeat with the remaining batter.

    Sweet Potato and Cumin Filling: Cook the sweet potatoes in boiling salted water until tender, about 10 minutes. Drain and transfer to a large bowl.
  • Step 3
  • Melt the butter in a large skillet. Fry the onion until golden brown, about 5 minutes. Combine the cumin, chili pepper, garlic, ginger, ground coriander, mustard seeds, and turmeric, stir, and add to the onion mixture. Cook for 1 minute. Transfer the onion mixture to the sweet potatoes and mix well. Add the chopped coriander and lemon juice. Season with salt.
