Cochinha is a delicious Brazilian dish that's easy to prepare and even quicker to eat. Chicken croquettes can be enjoyed as a standalone dish or with a side dish. Cochinha is a great option for snack and road food, are sold almost everywhere in Brazil - in stores and street stalls, as they are an integral part of local culture.


Ingredients:

  • Chicken breasts – 700 grams
  • Chicken broth - 4-5 cups
  • Carrots – 1 piece
  • Onion - 2 pieces
  • Bay leaf - 2 pieces
  • Butter - 2 tablespoons
  • Garlic - 2 cloves
  • Juice of one lime
  • Softened cream cheese – 500 grams
  • Flour - 2-3 cups
  • Eggs - 2 pieces
  • Breadcrumbs - 2-3 cups
  • Vegetable oil for frying
  • Salt and pepper to taste
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the chicken breasts in a large saucepan, pour in the chicken broth, add the carrots, one onion (peeled and halved), and bay leaf. Bring the broth to a boil and simmer for 15-20 minutes.
  • Step 2
  • Drain the broth and leave the chicken to cool.
  • Step 3
  • Using a food processor, a knife, or simply by hand, shred the meat breasts into pieces. Combine with cream cheese and lime juice.
  • Step 4
  • Finely chop the second onion and garlic. Fry in 2 tablespoons of butter until golden brown and soft.
  • Step 5
  • Add onion and garlic to chicken, stir.
  • Step 6
  • Bring 3 cups of chicken broth to a boil, gradually add 3 cups of flour, stirring vigorously, and cook for 2-3 minutes. The mixture will thicken like dough. Remove from heat and chill in the refrigerator for 1 hour.
  • Step 7
  • To form Cochin chicken croquettes, take a golf ball-sized piece of dough, roll it into a ball, make an indentation in the center, place 1.5 tablespoons of chicken filling in, and seal the dough. The shape of the chicken croquettes should roughly resemble a chicken drumstick. Place the croquettes on a dusted baking sheet.
  • Step 8
  • Beat the eggs in a bowl. Place the breadcrumbs in a small bowl, along with salt and pepper.
  • Step 9
  • Dip the Cochin croquettes in the egg, then roll in breadcrumbs.
  • Step 10
  • Fill a cauldron or deep fryer with oil to cover our chicken croquettes, heat to 180C, fry the croquettes until golden brown.

    Serve warm and enjoy!
