How to cook pulled pork

Pulled pork is a popular American barbecue dish, roasted until the pork falls apart easily along the grain. It's equally delicious when cooked at home in the oven; the meat is just as juicy and full of barbecue flavor. For this roast, it's best to use a whole pork shoulder (usually around 2 kg). The pork is rubbed with a spice mixture, marinated overnight in a dry marinade, and then baked for several hours in the oven at a low temperature. The finished meat is torn into small pieces with two forks and tossed with barbecue sauce. The easiest way to serve this juicy pulled pork is on buns as a sandwich.


Ingredients:

  • 1 piece of pork shoulder
  • 1/4 cup brown sugar
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 teaspoons coarse salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 4 onions, cut in half
  • 1 bottle barbecue sauce and hamburger buns, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine brown sugar, chili powder, paprika, garlic powder, salt, black pepper, and cayenne pepper. Rub the mixture all over the pork shoulder. Wrap the pork in plastic wrap and refrigerate for several hours or, preferably, overnight.
  • Step 2
  • Preheat oven to 150°C.
  • Step 3
  • Place the pork in a large pot on a bed of onion halves. Roast until tender and easily falling off the bone, about 7 hours. Remove the pork from the pot and place it on a cutting board. Chop some onion.
  • Step 4
  • BBQ sauce


    Place the pan on the stove over medium heat and add 0.5-1 cup of hot water. Scrape the bottom of the pan and cook for 5 minutes to reduce the sauce. Pour in the barbecue sauce and stir to heat through.

  • Shred the meat with two forks, add chopped onion to the pork, and then toss the pork with the prepared barbecue sauce, adjusting it to your taste. Serve the pulled pork on buns as sandwiches.
