Pinto beans simmered in a slow cooker with smoked pork knuckle are infused with a wonderful smoky aroma and spicy flavor, making them the perfect side dish for any meal. Serve them with any meat, or just eat them with pork knuckle pieces, wrap them in a tortilla for a hearty burrito, or serve them with cornbread for dipping and enjoying. Before adding the ingredients to the slow cooker, soak the beans and pork knuckle in water for several hours (preferably overnight), so plan ahead.


Ingredients:


Beans
  • 450 g dry pinto beans
  • 1 teaspoon chili powder
  • 0.5 tsp dried oregano
  • 220 g smoked pork knuckle or 110 g. deep-fried lard
  • 4 tbsp of water
  • 1 onion, chopped

Homemade seasoning
  • 1 tbsp. salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Wash the beans and soak them overnight in cold water. Drain the beans and pour them into the slow cooker. Add chili powder and oregano.
  • Step 2
  • If using a shank, soak it in a separate pot for at least 2 hours or refrigerate it for up to 24 hours, depending on how salty you want your broth. Place the shank in the slow cooker with the beans and pour in the soaking liquid. If necessary, add more water to completely cover the shank.

    If you're using deep-fried lard, cut it into cubes, fry it in a frying pan, and transfer it, along with the rendered fat, to the slow cooker with the beans. Add 4 cups of water.
  • Step 3
  • Add the onion to the slow cooker with the beans and meat. Stir well. Sprinkle with homemade seasoning to taste, cover the slow cooker, and cook on high until the beans are very tender, about 5 hours.

    Homemade seasoning:

    Mix all ingredients and store in an airtight container for up to 6 months.

    Exit: 1.5 tbsp.
