Knot Buns with Cranberries and Brie Cheese

These simple buns are made with store-bought pizza dough, which saves a lot of time. But the truly magical flavor comes from the cranberry sauce and Brie filling. Form the dough into knots, top with the filling, and bake until the buns are golden brown and the cheese is completely melted. The flavor combination is amazing! Serve as an appetizer with the remaining cranberry sauce for dipping.


Ingredients:

  • 800 g chilled pizza dough, room temperature (see Note)
  • 1 circle (110 g) of brie cheese
  • 2 tbsp. l. olive oil
  • Premium flour for working with dough
  • 3/4 cup whole berry cranberry sauce
  • 1 teaspoon Italian seasoning
  • 90 g unsalted butter, melted
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Grease the bottom of a rimmed baking sheet with 1 tablespoon olive oil and place the pizza dough on top. Brush the top of the dough with the remaining 1 tablespoon olive oil and cover loosely with plastic wrap. Let rest at room temperature until doubled in size, 1 hour.
  • Step 2
  • Trim the rind from the sides of the brie wheel, then cut it into 18 equal-sized cubes. Set aside.
  • Step 3
  • Lightly flour your work surface. Using floured hands, form the dough into a 45 x 10 cm rectangle. Using a pizza cutter or a sharp knife, cut the dough into eighteen strips, each 2.5 cm wide.
  • Step 4
  • Form each strip into a 25 cm long rope and tie it into a knot, tucking the two ends under. Place the knots on two baking sheets and let them rest until slightly puffed, 40-45 minutes.
  • Step 5
  • Meanwhile, position oven racks in the upper and lower thirds of the oven and preheat the oven to 220°C.
  • Step 6
  • Using a sharp knife, cut a small slit in the surface of each knot and use your fingers to create a small indentation. Spoon 1/4 teaspoon of cranberry sauce into each well and top with 1 slice of brie. Set aside the remaining cranberry sauce for serving.
  • Step 7
  • Brush the tops of the buns with 4 tablespoons of butter. Sprinkle with Italian seasoning, 1/2 teaspoon of salt, and freshly ground black pepper to taste. Bake until the cheese is melted and the buns are cooked through and golden brown, 20-25 minutes. Let rest for 10 minutes and serve.
  • Step 8
  • Meanwhile, in a small bowl, combine the remaining cranberry sauce with 2 tablespoons of butter. Serve with rolls for dipping.

    Note

    Bring the pizza dough to room temperature to make it easier to work with.
