How to Make Snowman Pies with Sweet Filling

These charming pies have a home-made flavor, even though they're made with store-bought pei dough, making them much easier to work with. The orange jam filling and lemon juice help balance the sweetness of the icing, and a hint of chocolate ties the flavors together.

Ingredients:

  • Premium flour for working with dough
  • 400 g chilled pie dough
  • 0.5 cups orange confiture
  • 1 large egg, beaten
  • 1/4 cup milk
  • 5 tsp lemon juice (from about 1 lemon)
  • 1 cup powdered sugar
  • 60 g (about 1/3 cup) semi-sweet chocolate chips
  • 6 dried apricots, cut into long triangles
  • Special equipment: round cookie cutter with a diameter of 9.5 cm; round cookie cutter with a diameter of 7 cm.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C and line a baking sheet with parchment paper.
  • Step 2
  • On a lightly floured surface, roll out two layers of dough. Using a large cutter, cut out 12 circles. Cut out another 12 circles using a small cutter, re-rolling any scraps as needed. Place 6 large circles on parchment paper. Place 6 small circles on top of the large ones, overlapping them by 1 cm to create snowmen.
  • Step 3
  • Spoon 1 tablespoon of jam onto 6 snowman figures and spread it out, leaving a 0.5 cm (1/4 inch) border. Brush the edges with beaten egg. Top each snowman body with one of the remaining large circles, then top each snowman head with a smaller circle. Crimp the outer edges of the snowman with a fork to seal, then lightly crimp the bottom edge of the head to secure it to the body. Refrigerate for at least 30 minutes.
  • Step 4
  • Bake the pies until golden brown, 20-25 minutes, brushing with milk after 10 minutes. Transfer to a wire rack and let cool completely.
  • Step 5
  • Meanwhile, mix lemon juice with powdered sugar until smooth. Spread the glaze over the cooled pies and let set for 5 minutes.
  • Step 6
  • Insert a #1 or #2 round tip into a small pastry bag, or snip 0.3 cm from the tip of a zip-lock bag. Place the chocolate in a microwave-safe bowl and microwave, stirring every 30 seconds, until melted, about 1.5 minutes. Transfer the chocolate to the pastry bag and pipe eyes, mouths, and buttons onto the snowmen. Attach dried apricot pieces for carrot noses. Serve immediately.
