Black bean brownie

This healthy dessert was created especially for kids who aren't big fans of beans. Offer them this rich chocolate brownie, and you can be sure they'll get their share of protein and fiber. No one will even guess that half of the brownie is made from beans!

Ingredients:

  • Butter to grease the pan
  • 3/4 cup boiled black beans
  • 0.5 cups vegetable or olive oil
  • 2 eggs
  • 1/4 cup cocoa powder
  • 2/3 cup sugar
  • 1 teaspoon instant coffee or espresso
  • 1 tsp vanilla extract
  • 0.5 tbsp. chocolate in mini granules, divide
  • 1/3 cup premium flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1/4 cup powdered sugar for dusting
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C. Grease a 22cm square baking pan.
  • Step 2
  • In a blender, puree the beans with the butter. Add the eggs, cocoa, sugar, coffee, and vanilla. Melt half the chocolate and add it to the blender. Blend on medium-high speed until smooth. In a small bowl, combine the flour, baking powder, and salt. Add to the blender and puree until smooth. Add the remaining chocolate chips.
  • Step 3
  • Pour the batter into the prepared pan. Bake until the surface is slightly opaque around the edges and still slightly shiny in the center, about 20 minutes. Let cool for at least 15 minutes, then slice. Dust with powdered sugar and serve.
