In Mexico, pico de gallo refers to various types of salsa made from fresh, finely diced fruits and/or vegetables. The most common version is made with red tomatoes, white onions, and green chili peppers and is sometimes called "salsa mexicanana" because the colors of this salsa represent the colors of the Mexican flag.

Ingredients:

  • 700 g yellow or red tomatoes, seeded and chopped
  • 1 small onion, finely chopped
  • 0.5 cup chopped fresh cilantro leaves
  • 3 tablespoons freshly squeezed lime juice
  • 2 serrano peppers, seeded and finely chopped*
  • A pinch of coarse salt and freshly ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place all ingredients in a medium bowl and mix.
  • Step 2
  • Cover and refrigerate until ready to serve. This salsa can be made up to 4 hours ahead of serving. Add to tacos or Mexican dishes as a topping.

    Note *

    The serrano pepper is a fresh, small, green chile often added to salsa. It's slightly hotter than the jalapeño and can be found in Latin American grocery stores.
