Ingredients:


Cutlets
  • 700 g of ground beef
  • 1/2 cup diced onion
  • 1/2 cup panko breadcrumbs
  • 1 tbsp. salt
  • 1 tbsp. ground black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 lightly beaten egg
  • Oil for frying

Gravy
  • 2 tbsp (30 g) butter
  • 6 tablespoons of wheat flour
  • 2 cups beef broth
  • A little Worcestershire sauce
  • Salt and ground black pepper

Garnish
  • Hot boiled rice
  • 4 fried eggs on both sides
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • For cutlets: Mix the ground meat, onion, breadcrumbs, salt, pepper, Worcestershire sauce, and egg. Form into 4 patties. Fry them in a pan or under the grill in the oven until doneness is desired. Drain any excess fat from the pan and reserve it for the gravy.
  • Step 2
  • For the gravy: Combine the butter and patty fat and heat in a saucepan. Add the flour and mix well until the mixture is smooth and lump-free. Slowly whisk in the beef broth, stirring constantly until smooth. Add Worcestershire sauce and salt and pepper to taste. Cook until thickened and the flour flavor disappears.

    Dish presentation: Place the cutlets on hot boiled rice, put an omelet on top of the cutlets and pour over the gravy.
