Ingredients:

  • 225 g ground beef (with a little fat)
  • 1/3 cup rekaito (cilantro-based sauce, also known as sofrito)
  • 1/2 cup small Spanish olives stuffed with pimento peppers
  • 2 peeled and crushed fresh garlic cloves
  • 1 teaspoon of salt
  • 1/4 tsp ground black pepper
  • 3/4 cup tomato sauce
  • 1 tbsp. l. dried oregano
  • 2 tablespoons canola or vegetable oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • For picadillo: Heat oil in a heavy skillet over medium-high heat. Add ground beef and stir for 3-5 minutes, until the beef is browned and pink.
  • Step 2
  • Add the recaito and stir. Reduce heat to medium, add garlic, salt, and pepper. Add tomato paste, oregano, and olives. Simmer for 10-15 minutes. Refrigerate until ready to use.

    Culinary advice: This dish might seem a bit salty to some, but paired with sweet plantains as a pie filling, its flavor becomes perfectly balanced. If you're using it in another dish, you can adjust the amount of salt.
