"Moules frites" is a traditional Belgian dish consisting of mussels and French fries. The mussels are usually served in the same pot they were cooked in, with French fries (which, incidentally, are also considered to have originated in Belgium) served on a separate plate. Mussels are a valuable food, rich in protein and omega-3 fatty acids. For this dish, it's best to use fresh, live mussels with tightly sealed shells; this guarantees a healthy, tasty, and flavorful outcome.


Ingredients:

  • 900 g mussels in shells, wash, cut off the "beards"
  • 1/4 cup olive oil
  • 0.5 cups finely chopped shallots
  • 5 tablespoons thinly sliced ​​garlic
  • 1 cup white wine
  • 0.5 cup sour cream 15–30% fat
  • 1/3 cup chopped parsley
  • 2 tbsp (30 g) butter
  • 2 tbsp chopped chives
  • 2 tbsp. grainy mustard
  • French fries for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat olive oil in a large cast iron pot or 30 cm (12 in) sauté pan over medium heat. Add the shallots and garlic and sauté for 2 minutes until softened. Pour in the white wine and bring to a simmer. Season with salt and pepper to taste.

    Add the mussels, cover, and cook for 3 minutes, until the shells open. Using a slotted spoon, transfer the mussels to a large platter.
  • Step 2
  • Add sour cream, parsley, butter, chives, and mustard to the remaining liquid. Stir everything together and bring to a boil. Pour the resulting sauce over the mussels and serve with French fries.
