Layered samsa with potatoes - a detailed recipe.


Ingredients:

  • 1 pack (450-500 g) of unleavened puff pastry, defrosted
  • 1 egg, beaten
  • 1 cup of ready-made mashed potatoes
  • 1/2 cup diced cooked carrots or green beans
  • 1/2 cup frozen peas, thawed
  • 1/4 tsp curry powder
  • 1 tbsp chopped cilantro
  • 1 tbsp chopped mint
  • 1 tbsp. ground ginger
  • Salt and Cayenne pepper
  • Yogurt
  • Cranberry sauce (See the recipe here)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, mix mashed potatoes, vegetables, peas, curry, cilantro, mint, ginger, salt and pepper.
  • Step 2
  • Roll out the dough on a floured surface and cut into 25 small squares. Place one tablespoon of filling in the center of each square. Brush the edges with egg wash and fold into a triangle. Bake in the oven at 180°C until golden brown, 20-25 minutes.
  • Step 3
  • Mix the yogurt with cranberry sauce, serve with samsa.
