Even chocolate chip cookies can be made healthier and more diet-friendly by baking them with a mixture of whole-wheat flour and ground oats, which also adds fiber. Some of the butter can be replaced with applesauce. It adds a touch of moistness to the cookies, making them soft on the inside and slightly crisp on the outside. This recipe yields a ton of delicious cookies; bake them in batches, letting the baking sheets cool completely between each batch. Treat your friends and family; they'll never guess they're diet-friendly.

Ingredients:

  • 1.5 cups whole wheat flour
  • 0.5 cups oatmeal
  • 1 teaspoon of baking soda
  • Fine salt
  • 1 more egg category CO
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 165 g softened butter
  • 0.5 cup granulated sugar* (See Note)
  • 0.5 cup brown sugar* (See Note)
  • 3/4 cup dark chocolate chips
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position oven racks in the upper and lower thirds of the oven and preheat to 350°F (175°C). Line two baking sheets with parchment paper.
  • Step 2
  • Place the flour and oats in a food processor and pulse until smooth. Transfer to a bowl, add the baking soda and 0.5 teaspoon of salt, and whisk until evenly distributed. In a small bowl, combine the egg, applesauce, and vanilla.
  • Step 3
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a hand mixer), place the butter, granulated sugar, and brown sugar. Beat on medium-high speed until light and fluffy, about 4 minutes. Add the applesauce and egg mixture and beat, scraping down the sides of the bowl as needed. Reduce the mixer speed to medium-low and beat in the flour mixture in two additions, mixing until the flour is completely incorporated. Add the chocolate chips and mix until evenly distributed.
  • Step 4
  • Spoon 1 tablespoon of dough onto the prepared baking sheets, spacing them about 2 inches apart. All the dough won't fit on two baking sheets; you'll need to bake the cookies in batches. Bake until golden brown, 10-12 minutes, rotating the baking sheets halfway through. Cool the cookies on the baking sheets for a few minutes, then transfer them to wire racks to cool completely. Once the baking sheets have cooled, repeat with the remaining dough. Store the cookies at room temperature in airtight containers for up to 3 days.
