Deviled Eggs "Christmas Trees"

If you're serving deviled eggs for New Year's, make them into charming, decorated Christmas trees! Avocado and fresh herbs are added to the yolk filling, creating a green color. Pipe tall Christmas trees into the egg white halves using a pastry bag fitted with a star tip, and attach a small star to each tree using a bell pepper. Decorate each tree with paprika and, if desired, cut out small ornaments from the bell peppers.


Ingredients:

  • 12 eggs
  • 2 tablespoons mayonnaise
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp chopped pickled cucumbers + 1 tsp brine
  • 2 teaspoons Dijon mustard
  • 2 tsp lime juice
  • 1 teaspoon of sugar
  • 1 teaspoon white vinegar
  • Half a ripe avocado
  • Yellow bell pepper, for garnish
  • Smoked paprika, for sprinkling
  • Special equipment: a pastry bag with a star tip; a small star-shaped cookie cutter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Fill a large saucepan with enough water to cover the eggs, then bring to a boil. Using a slotted spoon, carefully lower the eggs into the boiling water. Cover and simmer for 10 minutes. Run the eggs under cold water to cool completely.
  • Step 2
  • Peel the eggs, halve them, and scrape the yolks into the bowl of a food processor. Add the mayonnaise, parsley, cilantro, pickles and brine, mustard, lime juice, sugar, vinegar, avocado, and a pinch of salt and black pepper, and process until smooth. Transfer the mixture to a pastry bag fitted with a star tip and pipe it into the egg whites, filling each half with a tall mound of filling (depending on how high you mound the eggs, you may not have enough filling for all the egg white halves; set the remainder aside for another use).
  • Step 3
  • Using a small knife or a small star-shaped cookie cutter, cut stars out of the yellow pepper. Place one star on top of each mound of filling. Sprinkle with smoked paprika.
