This salad of sweet grape tomatoes, fresh baby corn, boiled gemelli pasta with herbs, and aromatic bits of fried bacon in a homemade ranch dressing is summery, colorful, and perfect for picnics. If you've never eaten raw corn before, this is a great option to try!

Ingredients:

  • 110 g of gemelli pasta
  • 1 small clove of garlic
  • 1/3 cup low-fat sour cream
  • 1/3 cup of sour milk or kefir
  • 2 teaspoons apple cider vinegar
  • 1 green onion, finely chopped
  • 2 small ears of young corn
  • 200 g grape tomatoes of different colors, cut in half
  • A quarter of a small red onion, thinly sliced
  • 4 cups fine arugula
  • 2 strips bacon, fry then crumble
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cook the pasta according to package directions; drain and rinse under cold water to cool.
  • Step 2
  • Meanwhile, finely chop the garlic clove on a cutting board, sprinkle with salt, and mash with a chef's knife to form a paste. Add the garlic paste to a large bowl along with the sour cream, yogurt, vinegar, and green onions; season with salt and pepper to taste. Stir the dressing until smooth and set aside.

  • Cut the kernels from the corn cobs (if desired, break up any clumps of stuck kernels into 2-inch (5-cm) chunks). Add the corn, tomatoes, onion, and arugula to the bowl with the dressing; toss gently to coat. Sprinkle with the cooked bacon.
