- 110 g of gemelli pasta
- 1 small clove of garlic
- 1/3 cup low-fat sour cream
- 1/3 cup of sour milk or kefir
- 2 teaspoons apple cider vinegar
- 1 green onion, finely chopped
- 2 small ears of young corn
- 200 g grape tomatoes of different colors, cut in half
- A quarter of a small red onion, thinly sliced
- 4 cups fine arugula
- 2 strips bacon, fry then crumble

- Cook the pasta according to package directions; drain and rinse under cold water to cool. Step 2
- Meanwhile, finely chop the garlic clove on a cutting board, sprinkle with salt, and mash with a chef's knife to form a paste. Add the garlic paste to a large bowl along with the sour cream, yogurt, vinegar, and green onions; season with salt and pepper to taste. Stir the dressing until smooth and set aside. Step 3
- Cut the kernels from the corn cobs (if desired, break up any clumps of stuck kernels into 2-inch (5-cm) chunks). Add the corn, tomatoes, onion, and arugula to the bowl with the dressing; toss gently to coat. Sprinkle with the cooked bacon.
