If you bought celery stalks for appetizers or soup, don't throw away the tender outer leaves. Save them for this creamy pasta salad. Ranch dressing, carrots, and celery complement each other harmoniously in any recipe, and this salad is no exception! Start with a simple and easy homemade dressing, which always surpasses store-bought in flavor and quality.

Ingredients:

  • 450 g fusilli pasta (spirals)
  • 3/4 cup finely chopped carrots (about 1 large)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 3 tbsp finely chopped fresh chives, plus extra for serving
  • 3 tbsp finely chopped celery leaves
  • 2 tablespoons freshly squeezed lemon juice
  • 4 tsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 clove of garlic, grated
  • 0.5 cup finely grated Parmesan (about 30 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large pot of water to a boil, add salt, and cook the pasta according to package directions. Drain, then rinse the pasta under cold water to cool completely; drain well again.
  • Step 2
  • Meanwhile, set aside 2 tablespoons of carrots for serving. Place the remaining carrots in a large bowl and whisk together the mayonnaise, sour cream, chives, celery leaves, lemon juice, Worcestershire sauce, onion powder, garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth. The dressing can be covered and refrigerated until tomorrow.
  • Step 3
  • Add the pasta to the bowl with the dressing and toss. Before serving, sprinkle the salad with Parmesan cheese, the remaining carrots, and chives. Season with pepper to taste.
