This ziti pasta salad is packed with the vibrant flavors of the popular BLT combination (bacon, lettuce, and tomatoes), but instead of traditional lettuce, use arugula. Its savory note adds a richer flavor. A delicate sour cream and mayonnaise dressing with fresh basil, chives, and parsley also plays a key role. Serve as an appetizer or side dish.

Ingredients:

  • 8 strips bacon, finely chopped
  • 1/3 cup mayonnaise
  • 1/4 cup chopped fresh basil
  • 3 tbsp sour cream
  • 2 tbsp finely chopped fresh chives
  • 2 tbsp chopped fresh parsley
  • 1.5 tbsp freshly squeezed lemon juice
  • 200 g dry ziti pasta (tubes)
  • 3 cups loosely packed arugula
  • 3 ripe tomatoes, cut into pieces
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large saucepan, bring salted water to a boil.
  • Step 2
  • Place the bacon in a large, cold skillet over medium heat and cook, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper towel-lined plate to drain. Set aside.
  • Step 3
  • In a large bowl, combine mayonnaise, basil, sour cream, green onions, parsley, lemon juice, 1/2 teaspoon salt and a few grinds of freshly ground black pepper.
  • Step 4
  • Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; add to the bowl with the dressing.
  • Step 5
  • Add the arugula and tomatoes to the bowl and toss. Season with salt and pepper to taste. The pasta salad is best served immediately.
