Ree Drummond decided to combine pasta with a popular steakhouse dish – steak and creamy greens. It turned out fantastic! Simmer the dense greens in a savory, creamy, cheese-infused sauce and top with cooked fettuccine pasta. Serve with grilled steak, drizzled with a light tomato sauce.

Ingredients:

  • 450 g fettuccine
  • 2 tablespoons salted butter
  • 2 tbsp. l. olive oil
  • 2 strip steaks, 2 cm thick.
  • 1 large onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 2 tbsp tomato paste
  • A pinch of red pepper flakes
  • 1/3 cup white wine
  • 1/3 cup heavy cream
  • 2 cups shredded kale
  • 2 cups shredded kale
  • 2 cups small spinach
  • 1.5 cups grated fontina cheese
  • Steak sauce
  • 2 tbsp chopped fresh curly parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large saucepan of salted water to a boil. Add the fettuccine and cook until al dente. Remove 0.5 cups of water from the pan and drain the pasta in a colander.
  • Step 2
  • Heat a cast-iron skillet over medium-high heat. Add the butter and olive oil. Season the steaks with salt and black pepper. When the oil is hot, add the steaks to the skillet and cook for 3-4 minutes on each side until medium-rare. Transfer the steaks to a cutting board and let them rest.
  • Step 3
  • Add the onion, garlic, tomato paste, and red pepper flakes to the pan, then stir quickly and cook for 1-2 minutes. Add the wine and let cool for 30-60 seconds, then add the cream. Stir, then add the kale, kale, and spinach. Stir and let the greens wilt for 2-3 minutes. Add the pasta, pasta draining water, and cheese. Cook until the sauce thickens, about 2 minutes. Remove from heat.
  • Step 4
  • Slice the steak and place it on top of the pasta. Drizzle the steak sauce over the steak and sprinkle with curly parsley. Serve straight from the pan.
